Summer Cooling Cucumber, Watermelon & Mint Salad

Summer is the perfect time to enjoy foods that naturally support digestion without overwhelming it. Eating in Season looks like: cucumbers, watermelon, leafy greens, fresh berries, light salads, and steamed seasonal vegetables.

RECIPE

Enjoy this salad as a light lunch, a side dish, or a refreshing snack after spending time in the sun!

Servings: 4
Prep Time: 15 minutes

Cook Time: 5 minutes (toasting the pumpkin seeds or almonds, if not already toasted)

Total Time: 35–40 minutes (including chilling)

Ingredients

  • 2 cups seedless watermelon, cubed

  • 1 English cucumber, sliced into half-moons

  • ¼ cup fresh mint leaves, torn

  • ¼ cup crumbled feta cheese (optional)

  • 2 tablespoons toasted pumpkin seeds or sliced almonds

  • Juice of 1 lime

  • 1 tablespoon extra virgin olive oil

  • Pinch of sea salt

  • Freshly cracked black pepper (optional)

Instructions

  1. Combine the watermelon, cucumber, mint, and feta in a large bowl.

  2. Whisk together the lime juice, olive oil, and sea salt.

  3. Pour the dressing over the salad and gently toss.

  4. Sprinkle with toasted pumpkin seeds or almonds just before serving.

  5. Chill for 15–20 minutes before serving for an extra-refreshing dish.
